Beautiful summer tomatoes make this simple fresh salsa..

Serves: 2 to 4 servings
Ingredients
1 cup diced fresh tomatoes -- Roma or other meaty tomatoes -- quartered cherry tomatoes work great also
2 tablespoon finely chopped fresh onion
1 to 2 tablespoons finely chopped jalapeno
1 clove minced garlic
Juice of ½ fresh lime
2 tablespoons fresh cilantro or parsley
Instructions
Dice tomatoes and onions
Smash garlic clove and mince
Finely chop the jalapeno - this is approximately one small one without seeds (seeds will intensify the heat, so I leave that to your discretion) Other types of hot peppers can be used with care.
Lightly sprinkle with Kosher or Sea Salt and fresh ground pepper.
Add chopped herbs-- I am not a cilantro fan, so I normally use parsley, however in the picture below one of my herbed salt mixtures in lieu of regular salt. You can find the recipe on my Saving Summer in a Jar blog.
Squeeze in lime juice, mix and let rest in the fridge at least ½ hour to get flavors to mull.
If you don't get enough heat from your jalapeno you can add a couple of drops to taste of Tabasco or your favorite hot sauce.
