Fresh Salsa / Pico De Gallo

Beautiful summer tomatoes make this simple fresh salsa..

Serves: 2 to 4 servings
Ingredients
  • 1 cup diced fresh tomatoes -- Roma or other meaty tomatoes -- quartered cherry tomatoes work great also
  • 2 tablespoon finely chopped fresh onion
  • 1 to 2 tablespoons finely chopped jalapeno
  • 1 clove minced garlic
  • Juice of ½ fresh lime
  • 2 tablespoons fresh cilantro or parsley
Instructions
  1. Dice tomatoes and onions
  2. Smash garlic clove and mince
  3. Finely chop the jalapeno - this is approximately one small one without seeds (seeds will intensify the heat, so I leave that to your discretion) Other types of hot peppers can be used with care.
  4. Lightly sprinkle with Kosher or Sea Salt and fresh ground pepper.
  5. Add chopped herbs-- I am not a cilantro fan, so I normally use parsley, however in the picture below one of my herbed salt mixtures in lieu of regular salt. You can find the recipe on my Saving Summer in a Jar blog.
  6. Squeeze in lime juice, mix and let rest in the fridge at least ½ hour to get flavors to mull.
  7. If you don't get enough heat from your jalapeno you can add a couple of drops to taste of Tabasco or your favorite hot sauce.
