Make the starter (a.k.a. poolish)
Mix the following in a medium-sized bowl:
½ cup cool water
1/16 teaspoon active dry yeast or instant yeast
1 cup King Arthur Unbleached All-Purpose Flour*
Mix the dough
Mix the following together to make a rough dough:
1½ teaspoons active dry yeast or instant yeast
1 cup + 2 tablespoons lukewarm water
all of the starter
3½ cups King Arthur Unbleached All-Purpose Flour
2 teaspoons salt
